What does “retort” mean?
Retort is a cooking and preservation method that uses controlled heat and pressure to seal the abalone in its pouch. This keeps it shelf-stable without preservatives while maintaining flavour and texture.
What kind of abalone is it?
Our abalone is Australian Tiger Abalone, bred from a male Greenlip and female Blacklip abalone, known for its delicate ocean flavour and firm, buttery texture.
Does it need to be refrigerated?
No. Retort abalone is shelf-stable and can be stored in a cool, dry place before opening. Once opened, refrigerate and consume within 2–3 days.
How should I serve retort abalone?
You can slice and serve it straight from the pouch, lightly char it, or add it towards the end of cooking in stir-fries, noodles, rice dishes, or soups. Avoid overcooking.
Why does some abalone appear slightly blue?
A bluish tint is natural and comes from hemocyanin, a copper-based protein found in abalone. It does not affect quality or taste.
