- Cooked rice, for serving
For the Sauce:
- 1/4 cup oyster sauce
- 2 tablespoons sweet chili sauce
- 1 teaspoon cornstarch (optional, for thickening)
Instructions:
- Prepare the Abalone:
- For easier preparation, use a 10pc Vacuum pack or can, these abalone are precooked and will only need to be heated through.
- If using live abalone, prepare and clean them thoroughly. Abalone can be tough, so tenderizing methods such as pounding, or pressure cooking may be needed depending on their size and quality.
- Make the Sauce:
- In a small bowl, whisk together the oyster sauce, sweet chili sauce, and cornstarch (if using). Set aside.
- Stir Fry:
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- For Live Abalone: add the abalone and stir fry for about 2-3 minutes until lightly browned and cooked through. Remove from the skillet and set aside.
- Cook Vegetables:
- In the same skillet, add the remaining tablespoon of vegetable oil.
- Add the sliced onion and carrot. Stir fry for 2-3 minutes until they start to soften.
- Add the broccoli florets and baby corn halves to the skillet.
- Continue to stir fry for another 3-4 minutes until the vegetables are crisp-tender.
- Add Precooked Abalone:
- Add the Vacuum packed or canned abalone.
- Stir fry for 2-3 minutes or until they are heated through.
- Combine Everything:
- Return the cooked abalone to the skillet with the vegetables.
- Pour the sauce over everything in the skillet.
- Finish and Serve:
- Stir everything together gently until the sauce coats all the ingredients and thickens slightly.
- Remove from heat and serve the stir fry immediately over steamed rice.
- Garnish (optional):
- You can garnish with sesame seeds, chopped green onions, or fresh cilantro for added flavour and presentation.
Enjoy your stir fry abalone with vegetables, served hot and flavourful alongside rice!
