- 50g Ocean Road Prime Abalone
- 1 cup flat rice noodles (cooked)
- 1 cup rocket
- 1 cup bean shoots
- ¾ cup coriander leaves
- 1 ½ sheets nori (crumbled)
- ½ red chilli
- 1 tbsp. pickled ginger
- 1 tbsp. balsamic vinegar (thick)
- 2 tbsp. rice wine vinegar
- 1 tbsp. sweet chilli sauce
- Juice of ½ lime
- Combine dressing ingredients.
- Slice abalone meat finely and combine with half dressing, rest in fridge for half an hour.
- In salad bowl combine cooked noodles, rocket, bean shoots, coriander and nori and dress with remaining dressing.
- On serving plate pile salad and top with abalone meat and its dressing.
- Serve with fresh lime cheek and thin sliced red chilli sprinked on top.
